What is natural living rice
Natural living rice is one of the most popular and nutritional Chinese foods. It has another name: Fermented Glutinous Rice. It has a unique and delicious taste which has been enjoyed by Chinese people for thousands of years, and has always have been regarded as a healing food.

Natural living rice as a type of yoghurt made from rice. It is cooked rice that has been fermented but has not yet turned into rice wine.
 
Nutritional values of natural living rice
In the fermentation process, active yeast and bacteria break down the complex starch in rice, and turn it into natural sugar. It contains a host of living bacteria. It has abundant digestive enzymes and natural sweetness, also has a delicious gentle wine like texture. It is an ideal food for improving blood circulation. It helps digestion and promotes youthful looking skin.

The red berry on top is a famous natural herb "Goji". "Goji" helps reduce blood sugar and high cholesterol levels. It produces natural hormones and strengthens the nervous system.

In Chinese history during the Qing Dynasty there was a famous Chinese herbalist doctor called Li Qing Yun. He lived to be 256 years old. He was born in 1677 and died in 1933. When he was 200 years old he was still teaching at the university. He had 24 wives. One of his secrets for longevity was to drink Goji tea every day.

Serving suggestions
Natural living rice can be substituted for porridge, hot pudding, ice cream and dairy yoghurt. It can be served cold or warm. You can have it for breakfast, dessert, or even a snack. Eat as is or add fruit, and any kind of milk. It can be diluted for a milder taste. Keep refrigerated.

Serve cold on hot days
  1. Eat as is any time of the day.
  2. For Breakfast: 2 heaped tablespoons of Natural living Rice with half a cup of soy milk, add some fruit salad or any kind breakfast corals.
  3. For milkshakes: 2 heaped tablespoon of Natural Living Rice with 1 banana, 1 cup of milk, and blend all together.

Serve warm on cold days

1) 1 heaped tablespoon of natural Living Rice put in a soup bowl

Boil 1 small slice of ginger cut finely, 1 cup of water, boil together for 5 minutes, pour into a soup bowl mix well with the Natural Living Rice, add 1 teaspoon of raw brown sugar.

The above recipe in Chinese tradition is used for period pain, stomach discomfort or cold.

2) 1 heaped tablespoon of Natural Living Rice put in a soup bowl.

6 Chinese red date with 1 cup of water, boil together for 5 minutes, pour in to a soup bowl mix well with Natural Living Rice, add 1 teaspoon of raw brown sugar.

This recipe in Chinese tradition is used by pregnant women or teenage girls having menstrual problems. They believe it can stimulate hormone growth naturally.

3) 1 heaped tablespoon of natural Living Rice put into a soup bowl.

6 Chinese red dates, I small slice of ginger cut finely, 1 cup of water, boil together for 5 minutes, turn the heat off. Prepare 1 raw egg beat well in a separate bowl, quickly pour the egg into the soup, mix well then pour the soup into the Natural Living rice bowl, mix well and add 1teaspoon of raw brown sugar.

This recipe in Chinese tradition is commonly used by women after childbirth, because it is believed to help the mother to produce plentiful milk and baby can grow stronger.

4) 1 heaped tablespoon of Natural Living Rice put into a soup bowl.

1 teaspoon of sliced almond, 1 teaspoon of sultanas, 1 cup of water, boil together for 5minutes, pour into a soup bowl with the Natural Living Rice, mix well add 1 teaspoon raw brown sugar.

This recipe can be used as a healthy dessert.

History of fermented food

Fermented food is one of the oldest forms of food in the world. The combination of yeasts and bacteria have been used by humans, and applied for their well-being, since ancient times in all the world for the creation of health-promoting fermented drinks and foodstuffs. There is reliable information of fermented drinks being produced over 7000 years ago in Iraq, 5000 years ago in China and Egypt, 4000 years ago in Mexico, and 3500 years ago in Sudan.


Bread, cheese, wine, yoghurt, soy sauce, miso, pickled fruit, and vegetables are all fermented food.
 

Why do we need food to be fermented?

Fermentation can neutralize unhealthy chemicals found in food such as grains, beans, fruits and vegetables. Fermentation is the chemical breaking down of these organic substances and removes anti-nutritional factors to make food safe to eat. Fermentation was traditionally used to preserve raw material, enabling the final food product to have a longer storage life.

To achieve fermentation process, add a host of beneficial microorganisms this makes them easier to digest, increases the healthy flora in our intestinal tracts, and supports the immune function.


Fermentation can enhance the nutritional values of the food and can increase levels of vitamins in food specially vitamin B, which is very important for people in vegetarian diet and also to improve digestibility.


Fermented food in the future
Fermented foods are manufactured and consumed in practically every part of the world, for example, cereals, pulses, root crops, vegetables, fruits, meat and fish can all be preserved by variety of methods of fermentation which are used in many parts of the world.

Scientific research suggests that the Japanese population has less stomach cancer, heart disease and breast cancer because of miso soup in the daily diet.

In Russia, there is a health drink called kvass made from fermented black bread and apples. And an other health drink called kombucha made from fermented black tea or green tea with sugar.

In Korea, they have a favorite dish called kimchi made from fermented cabbage and radish.

In today's health conscious world more people are becoming aware that fermented foods can improve our health. The value of fermented food is being discovered through health education and through travelling to different parts of the world, experiencing different foods. Also, immigrants bring their own food culture and traditional foods to different parts of the world, and fermented foods such as miso, kimchi and kombucha have become widely accepted and recognised by the modern western world. In the future a greater variety of fermented foods will not only be found in health stores but in the supermarkets and local restaurants and so will become part of our daily diet. Natural living rice is a good example- sooner or later western people, moving torwards a broader food culture and experiencing the benefits, will begin to enjoy Natural living rice like the Chinese do. Few New Zealanders were familiar with suchi until Korean and Japanese immigrants introduced it to this country. It's delicious taste and low fat content have made sushi a very popular choice at many restaurant, lunch bars and take-aways.

History of rice
Rice is probably the world's single most important food stuff. Which are much-revered oriental food and the most important tropical cereal? It is the staple food of about half the human race and is often the main source of calories and the principal food of many millions of people.

Rice from which only husk has been removed, but layers of bran and most of the germ retained, is known as brown rice... Rice from which husk, germ and bran layers have almost completely been removed by power machinery is known as milled rice. Rice milled to a high degree is known as white rice.

Rice has been cultivated in south eastern Asia since ancient times where it is one of the oldest of food crops .One of the earliest mention of rice dates back to 2800 BC when a Chinese emperor established a ceremonial ordinance for the planting of rice that would later be used by the royal physicians for healing purposes.
 
Health value of rice
Starch constitutes the bulk of the rice grain. The protein content of the rice is lower than that of wheat, but is of superior. Quality and utilized is better by the body than the wheat protein. The ancient and modern oriental healers through traditional medicines have always advocated the use of natural brown rice as a key to youthful heal the building.

Rice has always been considered a magical healer in the East. It was originally believed to have medicinal values that could, restore tranquility and peace to those who where easily upset.
